Skip the gin and use non-alcoholic sparkling wine (or sparkling water) for the top. Keep the lemon and syrup.

Batch for two

For two: 2 oz (60 ml) gin, 1 oz (30 ml) lemon, 1 oz (30 ml) syrup; shake once, split, then top each glass. The rest of the bottle is for refills.
